Spice and masala testing
Spices are tested for three things: whether they have been bulked out with cheaper material, whether a synthetic colour has been added, and whether the microbiological and aflatoxin load is acceptable. Acid-insoluble ash is the workhorse parameter — it measures the sand and grit that bulking introduces.

Limits differ by spice — chilli, turmeric, coriander and cumin each have their own specifications under the food safety regulations. We report against the spice you declare.

Colour adulteration is a safety issue, not a quality one
Metanil yellow in turmeric and lead chromate in ground spices are not shortcuts on quality — they are toxic additions, and lead chromate in particular has been found at levels that matter for children. If you are packing ground spices bought from a trader rather than whole spices you grind yourself, an added-colour screen on incoming material is the single highest-value test in your programme.
Questions about this test
Why is acid-insoluble ash the important one?
Total ash rises with any mineral content, including what is naturally in the spice. Acid-insoluble ash isolates the silica — sand and soil — which is what bulking adds. It is the parameter that distinguishes a dirty lot from an adulterated one.
What do exporters usually get caught on?
Aflatoxin and pesticide residues, far more often than adulteration. Destination limits are frequently stricter than Indian ones, so test against the buyer’s specification rather than the domestic standard.
Can you test whole spices before grinding?
Yes, and it is the better control point. Adulteration is much easier to introduce and much harder to detect after grinding, so testing whole material at intake is more informative than testing the finished blend.
